Inspired by Marks & Spencer. I was walking around Harrogate – a country village in the United Kingdom, a couple hours outside of London. We didn’t want to have a heavy lunch, so decided to pick up some stuff from the deli at Marks & Spencer. What a treat. So many lessons to learn from the Brits – around food no less.
- pearl barley
- red rice
- lemon & basil oil dressing (see recipe below)
- mixed sprouted peas and beans (green peas, adzuki beans and chickpeas or similar)
Lemon & Basil Oil Dressing:
- basil infused sunflower oil
- lemon juice
- roasted garlic puree (garlic and rapeseed oil)
- lemon zest
I still have some experimenting to do around this recipe, including ingredients and amounts but feel free to explore on your own. The basic approach is straightforward. Simply prepare the quinoa, barley and rice and combine all the ingredients to suit your taste.
