Plum Pie

My friend Marina pointed me to a recipe for raw fruit pies. So I tried it using the plums freshly picked off my tree this past weekend.

I used almonds and pecans for the crust, but it didn’t hold together well. I may not have used enough dates. I’m going to try to add ground flax seed on my next experiment.

I also added fresh mint from the garden in to the plum fruit filling which gave it an interesting twist.

Update: after a day in the fridge with saran wrap on top, the crust finally became a moist delight.

I also found the plums a bit tart on their own. The second night, I served it with Tempt Vanilla Bean hempmilkcream. The sweetness of the vanilla made a perfect complement to the tart plums.
