I’ve noticed a new summertime ritual forming around my house and I’m loving every minute of it. Word’s getting around that I’m a bit of a freak when it comes to weeds. I love weeds. At least the edible ones.
My newest love affair is with lambsquarter, or wild spinach. I learned about lambsquarter last year and was happy to share my new-found knowledge with a couple of friends who had been unknowingly tending fairly good-sized crops of wild spinach in their backyards. ”Look at all this abundance!” I declared. This year, one of them dove in with the spirit and actually started making wild spinach salads. Wanna share your recipe Trish? Send me a pic!

In the meantime, I have grown quite fond of throwing my freshly weeded wild spinach into the blender along with whatever fruits and veggies I have on hand and fresh kale or lettuce from the garden.
Here’s one of my newfound favorites:
What you need:
- 2-4 cups fresh greens (kale, spinach, lambsquarter, lettuce, etc)
- 1 celery stalk, chopped
- 1 mango, peeled and pitted
- 6 strawberries
- 1 cup coconut water
- 2-4 fresh mint leaves
- 1 teaspoon agave or honey (optional)
How to make it:
- Combine ingredients in blender and blend well.
- Serve and enjoy!
